Crock Pot Pulled Chicken – Recipe Tuesday
Whether you’re looking for easy tail-gating food or something the whole family will enjoy for a grab-and-go dinner, this Crock Pot Pulled Chicken recipe is both delicious and low fat. Pulled chicken is great served in soft rolls with chips, in wraps, and even on homemade BBQ chicken pizza. Hungry sports fans can munch on this tasty dish all day while their teams play. Add a side of chips, coleslaw, or macaroni salad and you have an easy pot-luck meal as well.
The great thing about this dish is that it can be made with frozen chicken breasts. Just toss everything into the crock pot and leave it until you’re ready to eat. WORD OF WARNING! The house will smell so delicious it will be hard to prevent nibblers from wanting a taste!
Recipe for 6
6 frozen, skinless, boneless chicken breasts
1/4 cup brown sugar
1/4 cup Worcestershire Sauce
1 (12 oz) bottle BBQ sauce (pick your family’s favorite – we like smoky flavors and chutney)
1/2 cup onion, diced
1 tablespoon soy sauce
1/4 teaspoon red pepper flakes (IF you like it spicy and it goes well with your BBQ sauce).
Place the chicken breasts in the crock pot. Mix the brown sugar, Worcestershire sauce, BBQ sauce, onion and soy sauce in a bowl and pour over the chicken. Add red pepper flakes about an hour before you plan to serve. Let the mixture cook for 6 and 1/2 hours on high or 5 hours on low, depending on your particular crock pot. Using two forks, gently shred the chicken breasts and let the sauce mix in thoroughly. There will be extra sauce, so put some aside to add to the chicken if sandwiches are being made.
You can use the leftover chicken (if there are leftovers) for salads, too. We like making homemade pizzas with the pulled chicken and sauce, a bit of cilantro and a generous topping of mozzarella cheese. YUM! Hope you enjoy our variation of Crock Pot Pulled Chicken!
